Peanut Butter Raisin Muffins
1 pound raisins
2 1/2 cups plus 1/4 cup warm water
1 pound brown sugar
1/2 pound (2 sticks) butter
1/2 cup peanut butter
2 tsp baking soda
1 cup chopped peanuts
4 cups flour
2 tsp cinnamon
1 tsp nutmeg
1 cup applesauce
Preheat oven to 350F. Combine the raisins and 2 1/2 cups of the water in
a saucepan and cook on medium heat for 10 minutes. Add the brown sugar,
butter, and peanut butter and mix well. Remove from heat and let cool.
In a small bowl, dissolve the baking soda in the remaining 1/4 cup water
and add to the cooled raisin mixture. Add the peanuts, flour, cinnamon,
nutmeg and applesauce. Mix to combine. Do not over mix. Pour the batter
into greased muffin pans. Bake for 30 minutes or until an inserted knife
comes out clean. Makes 2 dozen muffins
